After Church we came home right away and I made some lunch. I made some spaghetti with Shrimps. Well, it's obvious that I love Shrimps. I'm sure you can tell because of my recipes here. Anyway I made this recipe up so that means I made my own measurements according to what's available on hand.
1/2 package spaghetti
1 can chickpeas
1 large can crushed tomatoes
1/2 package shrimps
3 cloves garlic, minced
1 tbsp. butter
salt and pepper
Cook spaghetti according to instruction. Add shrimps. Drain
Saute garlic with butter. Add crushed tomatoes, chickpeas. Season with salt and pepper. Add spaghetti and mix it together. Serve it in a bowl and sprinkle with parsley


Peel and cut ripe/yellow Mango and throw it in a juicer or blender. For blender puree it. Sweeten it according to your taste. You can use sugar or honey.
Add some water according to your preference as well. Add ice and enjoy!

GREEN MANGO
Peel and sliced green Mango. The Mangos that I've got is already yellow and it taste really sweet. I don't taste the sourness anymore. I just ate it like that with salt.


My family loves this cheesy garlic bread so from time to time I just go to the store and grab French bread.

INGREDIENTS
1 medium loaf French bread
1/2 cup butter, softened
2-3 cloves garlic, minced
1/3 cup cheddar cheese

Preheat oven to 375 F. Cut French bread halfway. Combine butter, garlic and cheddar cheese in a bowl. Spread butter mixture on the sliced bread. Bake until heated through, about 15 minutes.

Ripe Mangos





These are ripe and Green Mangos, one of my favorite tropical fruit. I love Mangos and I prefer the green one but it depends also how I want to do with it. Green Mango can be use for salad or just eat it by itself. Most Filipino pregnant women that I know of craved for that Green Mango. The husband will go crazy finding for that perfect Mango for his Wife...lol

There are different varieties of Mangos and different sizes as well.
Anyway the ripe Mangos above is very sweet! There's a lot of recipes that you can do with it. Show me one and post it in your blog. Let me know so I can visit and comment. Please don't forget to comment on the other participants.

Join
Yesterday was hubby's b-day so I invited some close friends and family. I cooked some favorite foods but I will only share one menu tonight. The other menu will be shared next time. However there is one dessert menu below this post. It's a Strawberry Cheesecake. I know most people love Strawberry Cheesecake. Do you? Anyway one of the menu that I would like to share is Lasagna Roll-Ups. Lasagna is my favorite pasta.
I hope you will try this one day. I will guarantee you that it is yummy and delicious!

Here's the Menu:
Ingredients
12 lasagna noodles
2 cups ricotta cheese
1 egg
1/4 cup chopped parsley
2 cups shredded Mozzarela or cheddar cheese, divided
8 ounces Italian sausage, casings removed
You can also use ground beef
1 package ground beef
1 jar marinara sauce, divided
Preheat oven to 375 F. Cook noodles according to package directions. Drain noodles and rinse with cold water. Mix ricotta, parsley, egg and 1 cup Mozzarela in a bowl. Set aside.
Cook sausage or ground beef in a skillet over medium heat until browned and crumbly. Drain fat.
Spread 1/2 cup sauce in a baking dish. Spread 3 tbsps. ricotta mixture on each noodle: top with some sausage/ground beef. Roll up each noodle and arrange seam sides down in baking dish.
Top roll-ups with remaining sauce and Mozzarela. Bake loosely covered, for 15 minutes. Remove cover; bake for 10 minutes longer or until brown and bubbly.

I used 1 packaged of Ground beef.


These are the Pasta noodles. You can use any kind of brand!!

For baked springform pan cheesecake. Prepare crust by pressing crust ingredients into pan. A mixture of Graham cracker, sugar and melted butter!!!

This is the finished Strawberry Cheesecake!!!

3 pkgs. cream cheese, softened
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup sour cream
1 large pkg. strawberries, stems removed
1 1/2 Graham cracker
1 pkg. strawberry glaze

Directions:
Mix cream cheese , sugar and vanilla at medium speed with electric mixer until well blended. Add eggs, mix until blended. Pour into crust.Bake at 350 F at 40 minutes until center is almost set.. Cool and refrigerate overnight or 3-5 hours. Open the strawberry glaze and follow the instructions. Coat the strawberries with the mix glazed and arrange them into the cheesecake.

Roasted Chicken


Last Sunday, March 16 after Church we got hungry so we ate at Swiss Chalet then proceeded to the place where my DD had fun hunting the Easter Egg. Anyway I had half Chicken with fries and shared the meal with my daughter. Hubby had the same one. Swiss Chalet is a restaurant chain in North America featuring roasted chicken and ribs. You can also order on the phone and online.

Join
These are some of the famous Merienda for Filipinos. Even though we are no longer living in the Philippines we are still able to eat these kind of snacks. My brother got them in a Filipino Bakery located in the City of Toronto.


These are Ube Bread

These are rice cake. I know how to make these cakes.


These are called Pork Bola-Bola Siopao. Siopao's are inspired by Chinese Cuisine if I'm not mistaken.

Anyway these are Chicken Siopao....

This is my own version of Broccoli with Shrimps:
1 cup sliced onions
6 mined garlic
2 tbsps. cooking oil
1 packed of peeled shrimps
1 bunched/sliced broccoli
Saute onions and garlic with oil until golden brown. Add shripms and brocolli. Season it a little bit of salt and pepper. Add oyster sauce!


Filipinos are mahilig sa Merienda and I'm one of them. I believed Merienda and Siesta have adopted these customs from the Spanish. Most Filipinos are still practicing these customs but not so much with Siesta I guess because everyone now are very busy and no time to nap in the afternoon. The Merienda is a light meal taken at mid-morning and mid-afternoon. I do it at midnight as well since I"m working night shift.
For Merienda you can served anything from noodles, fruits, coffeee, tea, , soft drinks, cookies, Halo-halo, champorado. Cuchinta, Bibingka, Maruya and many many more.
Cuchinta is very popular for pinoy especially during gatherings.

RECIPE:
2 cups water
1 cup white sugar
2 cup brown sugar
1 cup flour
1 teaspoon lye water (ligia)
4 tbsps. annatto water
Grated fresh coconut
In a bowl, mix together the water, sugars, flour and lye water. Add 4 tbsps. annatto water.
Fill oiled muffin pans or cuchinta molds 3/4 full with the batter. Place in a steamer. Cover and steam for 15-20 minutes.
Remove the pan from steamer and allow to cool before removing the cakes, by running the tip of a knife between the cakes and the sides of the pan. Sprinkle with the grated coconut. The picture above, I don't have coconut.

Tips:
Soak 2 tbsps. of annatto seeds in 1/4 cup hot water for 20 minutes that gives you a more reddish cuchinta.

Broccoli


This is Broccoli known as bracchium, meaning arm.
According to Wikipedia:
Broccoli is a plant of the Cabbage family, Brassicaceae (formerly Cruciferae). It is classified as the Italica Cultivar Group of the species Brassica oleracea. Broccoli possesses abundant fleshy flower heads, usually green in colour, arranged in a tree-like fashion on branches sprouting from a thick, edible stalk. The large mass of flower heads is surrounded by leaves. Broccoli most closely resembles cauliflower, which is a different cultivar group of the same species, but broccoli is green rather than white.

Join

13 kinds of beans


Added chicken, broccoli, onions, salt and pepper!!!

It was very cold this weekend and it has been snowing all day on Saturday with 10-15 inches snow out in the driveway. Hubby had been shoveling all day that day as well. Well, I decided to make beans soup! There are 13 kinds of beans in my soup and it taste good!








Ingredients:
1package of chicken liver
1package of chicken gizzard
3-4 pieces of long eggplant
1 cup sliced onion
5 pcs. minced garlic
soy sauce
salt & pepper

Wash all the the meat thoroughly. First cook gizzard in water for a little bit until the water is gone. Pour oil in frying pan and add the garlic and onion. Then add the chicken gizzard and the liver. When it's almost cook add the the sliced eggplant, soy sauce, salt and pepper. And that's it. Simple! Isn't it?
