One day I’ve been craving for Pork Tocino so I went to Asian store and bought a package. This is a Filipino dish sliced pork in seasoned sauce. I ate it with plain rice and tomatoes!

My 4 year old daughter was making ham cheese sandwich for lunch. She is very reliable now in the kitchen and it scares me. She wants to do everything. Well it’s okay if I’m around that way I can supervise her. Is your kids like that?

Hello friends! Just want to let you know that my domain cookandbaking.com is gone forever. It was expiring before and I tried to move it to another server. I moved it to Go Daddy but unfortunately it didn't work for some reason. Thankfully I was able to move the contents back to blogger. Well it's not a domain now. I'm still debating whether I'm going to moved this to a domain. That's means I have to get a new domain. We'll see!

Fresh Pita Pocket

I got this recipe from a Healthy Living paper. I think this is a great recipe. I'm going to try this in the coming days. Maybe you are interested too.

2 while wheat pita pockets
2 med. tomatoes, diced
1/2 cup seedless cucumber, diced
4fat-free cheddar cheese slices
3 low fat ham or turkey slices, julienne strips
1 tbsp seasoned rice vinegar
1/2 tsp black pepper
1 tsp basil
4 romaine or Boston lettuce leaves

Directions:
Cut pitas in half, open and line with lettuce. Cut cheese in half and place 2 slices in each pita. In a small bowl, mix tomatoes, cucumber, ham, or turkey strips, vinegar, pepper and basil. Spoon into pita between cheese slices. Serve immediately or wrap and keep chilled.

We all know that recession still going on and some of us have eye problems that need money. And I just happened to find out that Zenni Optical in the New York Times?! That is great news. It was mentioned that Zenni glasses are cheap. You can get and buy Prescription eyeglasses for only $8! Is big news I tell you and Seeing Straight Without Breaking Bank is good too you know!

Tupig


Tupig is a traditional Mirienda for most Filipinos during New Year’s Day. Tupig is made of glutinous rice coconut milk and coconut. I must admit that I don’t know what you call it in English and Tagalog. I know that Tupig is an Ilocano dialect and I believe that it’s originally Ilocano dessert as well. What do you think? Am I right? Anyway my recipe for Tupig is based on what's available here abroad. Some of the ingredients were frozen.
Here’s my Recipe:
Banana leaves
2 packaged of glutinous rice flour
2 cans coconut milk
1 ½ packaged shredded young coconut
Brown sugar (according to your taste)
Mix all the ingredients together. If you have to use your hands please do. Make sure your hands are clean though. Wrap the dough with banana leaf the same like you make Suman or Spring Rolls. Put about 1 tbsp. When you are done wrapping arrange them in a cookie tray and then put in the oven. Bake about 1 ½ hours for 375 degrees.
