Tupig is a traditional Mirienda for most Filipinos during New Year’s Day. Tupig is made of glutinous rice coconut milk and coconut. I must admit that I don’t know what you call it in English and Tagalog. I know that Tupig is an Ilocano dialect and I believe that it’s originally Ilocano dessert as well. What do you think? Am I right? Anyway my recipe for Tupig is based on what's available here abroad. Some of the ingredients were frozen.
Here’s my Recipe:
Banana leaves
2 packaged of glutinous rice flour
2 cans coconut milk
1 ½ packaged shredded young coconut
Brown sugar (according to your taste)
Mix all the ingredients together. If you have to use your hands please do. Make sure your hands are clean though. Wrap the dough with banana leaf the same like you make Suman or Spring Rolls. Put about 1 tbsp. When you are done wrapping arrange them in a cookie tray and then put in the oven. Bake about 1 ½ hours for 375 degrees.
